Hill Country

What does it mean to be at the threshold of the Hill Country? Growing up in Spicewood, the Hill Country was were the rolling hills that were covered in a mix of scrubby oaks and dusky oaks and a few scattered madrones would look like an emerald topped rolling sea. The thing of it is, the Hill Country is the gateway to the carsty-rock of the Edward’s Plateau which houses the enormous aquafer we all get the drinking water from. It is  the place where water trickles through the limestone and cuts deeply into the rock and makes the rivers roll to the lakes. Country drives seem to last for hundreds of miles (and they can if you’ll let them). The vast Hill Country covers over 41 counties in Texas is a place that opens up the sky and heads towards the junction of where Texas east meets west. More recently, the Hill Country has become a new wine region, and is experiencing some amazing beauty with its near mediterranean feel and ability to house grapes, olives let alone the cattle ranch or two.
