Set up a salsa garden! Recently I was informed that an airport snack in New York, consisting of chips and salsa was over $11 to serve two people. WOW! The amazing thing is that you can whip up some salsa in no time right in your own home from backyard garden ingredients for less money and you could serve two people fresh made salsa every night for the entire summer! How is that for an incentive to grow your own salsa garden? Take that, New York airport snack scene!
Simple Summer Salsa recipe-
1) 12 cored & seeded Roma tomatoes
2) 6 seeded & ribbed jalapeños
3) 6 seeded & ribbed Serrano’s
4) 1 seeded & ribbed bell pepper
5) 6 green onions cut into sections
6) 3 cloves of garlic
7) handful of cilantro leaves
8) ½ lemon squeezed
9) dash of olive oil
10) dash of soy sauce
11) salt & pepper to taste
Roast items 2-6 in the oven at 350 degrees for 15 minutes. After slight cooling; put the roasted items in the food processor along with items 7-11. Pulse until desired texture. Now, add the seeded and cored tomatoes pulse until desired texture. You have your own summer salsa from the Sol of your home; your garden. This is nice enjoyed as a light snack, for your house warming party or back yard grilling party.
Green tip-
Take the veggie scraps to your compost bin in your garden (or community garden); these will be broken down naturally by the environment instead of ending up in the landfill.
